		<description>Thanks, Jennifer.  Actually, I don&#039;t peel potatoes either.  The pictures of jerusalem artichokes look &#039;dirtier&#039; than most potatoes I&#039;ve come across.  I&#039;m looking forward to giving them a try soon.</description>
