Beans and Rice, I Could Eat a Plate Twice

red-beans.jpgBeans and rice are the staples of a vegetarian diet. This recipe is a kid pleaser, and super simple and quick if you use canned beans. Don’t forget to use Eden Foods canned beans to avoid BPA leaching, and of course, always use organic ingredients. This is another great recipe modified from The Garden of Vegan.

Beans and Rice

In a medium sized saucepan, combine:

  • 1 cup brown rice
  • 1 1/2 cups water
  • 1 can of beans (pinto, black, kidney, mixed, etc.)
  • 2 chopped cloves of garlic
  • 1/2 tsp. black pepper
  • 1 tsp. salt
  • 1 chopped carrot

Bring to a boil, then cover and simmer for 30 minutes. Add:

Cook for two additional minutes, then serve.

Hey thanks for the great blog, love this stuff. I don’t usually do much for Earth Day but with everyone going green these days I thought I try to do my part.

I am trying to find easy, simple things I can do to help stop global warming (I stress easy, I don’t plan on going out and buying a hybrid). I took the Earth Day Challenge that EarthLab.com is promoting ( http://www.earthlab.com/ ) and I am planning on lowering my score. They have some pretty good tips (they call them pledges).

I am looking for more easy fun stuff to do. If you know of any other sites worth my time let me know.

This recipe looks great! Even though we are an omnivorous family, we’ve taken to eating at least one meat free dinner per week and mostly meat-free breakfasts and lunches. It’s not only nutritionally better but it’s easier on the planet and our grocery bill as well. FYI–Over at http://greenbabyguide.com we’ve finally made our commenting process much easier. This needs repeating in student’s newspapers at all the nations schools. Tasty, nutritious, goes down good with beer, especially homebrew, so maybe there is another way to happiness? I like it!
P.S. A shot of soya sauce lights it up real nice!

I could not live without beans. There’s so many different ways to use them and they’re incredibly nutritious.
