&lt;em&gt;I&#039;m not overly concerned about bacteria breeding in water sitting out for a few hours... fruit does quite well without refrigeration, it will mold faster than if refrigerated, but most isn&#039;t even kept cold at the store and it comes from the earth which has a tendency to be dirty and hot.  That said, if bacteria is a concern for you, this works just as well in the fridge or another cool place, it just might take a little longer to flavor.  -Jamie Ervin &lt;/em&gt;</description>
