Beans and Rice, I Could Eat a Plate Twice
Posted in:
Beans and rice are the staples of a vegetarian diet. This recipe is a kid pleaser, and super simple and quick if you use canned beans. Don’t forget to use Eden Foods canned beans to avoid BPA leaching, and of course, always use organic ingredients. This is another great recipe modified from The Garden of Vegan.
Beans and Rice
In a medium sized saucepan, combine:
- 1 cup brown rice
- 1 1/2 cups water
- 1 can of beans (pinto, black, kidney, mixed, etc.)
- 2 chopped cloves of garlic
- 1/2 tsp. black pepper
- 1 tsp. salt
- 1 chopped carrot
Bring to a boil, then cover and simmer for 30 minutes. Add:
- 1 chopped tomato
- 1 Tbsp. Bragg’s Liquid Aminos
Cook for two additional minutes, then serve.
