Sushi, sushi, oh vegan sushi. This is some of the best vegan sushi I have ever had, let alone made.
I love vegan sushi. It definitely is one of my top 5 favorite foods, and that is saying a lot because I have A LOT of favorite foods. Sometimes it can be frustrating. It can be hard to find good vegan sushi. #vegansushiprobs
I always thought sushi would be way too hard to make at home. From all the different fillings you have to prepare to the rolling itself, it seemed like a daunting task. And while this may not be the fastest meal ever, it is well worth the wait. To speed things up, you can cook the rice ahead of time(I like to keep some in the fridge all the time for any sushi emergencies I may have) and pre-cut the carrots and cucumber. If you are prepared, you can have sushi on the table within 10 minutes!
Rolling and cutting them takes some practice, but it’s really not as hard as it looks. Basically, you lay rice out thinly and add vegetables on top. Next, you take the bottom edge and roll it over as tightly as you can and continue rolling. Add a drop or two of water or a few pieces of rice to make the seam stick and slice away! Enjoy your vegan sushi. 🙂
