Fresh Summer Salsa

This fresh summer salsa incorporates sweet cherry tomatoes, lots of fresh cilantro, red onion, fresh jalapeno, corn, and bell pepper.  It also makes a great base for any summer add-ins you might have. I incorporated chunks of grilled peaches last week and it was incredible!

This salsa is a classic recipe that I make multiple times a week in the summertime.  The fresh summer salsa is so good you might find yourself just eating it with a spoon.  It is pictured here with a tofu scramble and black bean burrito. Yummmmmm.

Fresh Summer Salsa

Ingredients
  1. 10-12 cherry tomatoes
  2. 1 medium tomato
  3. 1/4 cup fresh corn
  4. 1/2 cup cilantro
  5. 1/2 cup red pepper
  6. 1/4 cup red onion
  7. 1 jalapeno, depending on your spice preference
  8. 1 lime
  9. pinch of salt and pepper
Instructions
  1. Dice red pepper, onion, cilantro, and jalapeno. Cut up tomatoes, depending on how chunky you like your salsa. Combine all ingredients in a bowl and mix up.
