Kid-Friendly Vegetarian Recipes: Organic Vegan Chocolate Pecan Brownies

I’ve been making the same vegan chocolate brownie recipe for almost two decades. Recently, I decided to try a new recipe, since I have added eggs to my diet.  I searched the internet and found a recipe that promised to be the best brownies; however, they did not compare to my vegan recipe. Whether you are a vegan or not, these vegan chocolate brownies are quick, simple, and delicious.

Vegan Chocolate Pecan Brownies

Mix and cook on low heat until thick.  Cool completely:

  • 1/3 cup flour
  • 1 cup water

In a separate pot, melt:

  • 1/2 cup margarine

Add and stir until smooth, then cool completely:

  • 2/3 cup organic cocoa powder

Into the cooled flour mixture, beat:

  • 2 cups organic sugar
  • 1/2 tsp. salt
  • 1 tsp. vanilla
  • cocoa mixture

Mix together, then add to the above mixture:

  • 2 cups organic flour
  • 2 1/2 tsp. baking powder
  • 1/2 cup chopped pecans (or walnuts)

Place in an oiled 9″ x 13″ glass pan, then top with whole pecans or walnuts halves. Bake at 350 degrees for 20 to 25 minutes.  Optional: dust with powdered sugar after removing from the oven.

    These really do look yummy and I will be trying out this recipe with my kids age 6 and 9 who I’m sure will love making and eating them!

    These look great but my children have food allergies which prevent the use of nuts and margarine (because of dairy and soy). Do you think the reciped would work if I used oil and omit the nuts? Do I need to tweak it further? Thank you!

    If you don’t care about them being vegan, you can substitute butter. I have not tried oil, but I think it would work fine. I don’t think you would need to tweak anything. Maybe add flax seeds instead of nuts to boost the nutritional value.

    I tried these brownies and maybe I made a mistake somewhere but they turned out to be very strange. I used whole wheat flour instead of white flour and that might’ve been where I went wrong… They turned out mushy and tasteless.

    I know this is an old post, but I just discovered it and LOVE THESE BROWNIES! I can’t have soy, which is in a lot of margarines, so I used Soy-Free Earth Balance Buttery Spread and they turned out GREAT!
