This vegan dal soup recipe is adapted from Lord Krishna’s Cuisine The Art of Indian Vegetarian Cooking by Yamuna Devi. I have simplilfied the steps and used all vegan ingredients. It truly is the best vegan dal soup recipe ever!
The Best Vegan Dal Soup Recipe Ever!
[yumprint-recipe id=’21’]“Devi’s Vishakha’s Cream of Vegetable Dal Soup” has many more steps than my adaption. If you want a more authentic vegan dal soup recipe, refer to her cookbook. She calls for yellow or green split peas, but they must be soaked for an hour in hot water prior to cooking. I prefer the red lentils for simplicity and quick cooking time. You can subsititute any vegetable in this recipe.
I recommend using a hand immersion blender to puree. They are great tools that make soup making easy. They are also usesful for making your own baby food. Also, you should be able to find any of the spices at your local health food store or coop. Enjoy!
