This simple one pot dal recipe is delicious and easy to make. I often double the recipe so we have lots of leftovers.

Ingredients
  1. 6 Tablespoons red lentils
  2. 3 Tablespoons basmati rice
  3. 2 Tablespoons coconut oil
  4. 1/2 teaspoon turmeric
  5. 1/4 teaspoon asafatida
  6. 1/2 dried chili (optional)
  7. 1/2 inch grated fresh ginger (can substitute powder ginger)
  8. 2 carrots
  9. 1/2 cauliflower head
  10. 5 1/4 cups water
  11. 1 Tablespoon ground cumin
  12. 1 Tablespoon ground coriander
  13. 1 teaspoon garam masala
  14. 1 1/2 teaspoon salt
Instructions
  1. Combine all the ingredients in one pot. Cook until the lentils are soft and broken down. Puree in a blender or with a hand blender. Add black pepper and garnish with cilantro if desired.

“Devi’s Vishakha’s Cream of Vegetable Dal Soup” has many more steps than my adaption. If you want a more authentic vegan dal soup recipe, refer to her cookbook. She calls for yellow or green split peas, but they must be soaked for an hour in hot water prior to cooking. I prefer the red lentils for simplicity and quick cooking time. You can subsititute any vegetable in this recipe. 

I recommend using a hand immersion blender to puree. They are great tools that make soup making easy. They are also usesful for making your own baby food. Also, you should be able to find any of the spices at your local health food store or coop. Enjoy!
