I love green bean casserole, but since becoming an avid organic eater, I have never found suitable french fried onions to add that right crispiness on top, that is, until now!  For Thanksgiving, I did find some french fried onions at Trader  Joe’s, but they weren’t organic.  Yesterday, I finally found organic french fried onions!  I’ve tried making my own, but I have never been very successful.  The convenience of buying them is appreciated when cooking a big meal.

As a child, I did not like cranberry sauce. It looked weird in its jellied can shape, and I just didn’t like the flavor. In contrast, my children love cranberry sauce! Freshly made is much preferred to organic canned, especially considering the BPA risk in tin cans. Here is a basic, simple recipe for cranberry sauce.  Remember to make this ahead of time, as it needs to chill for a few hours to thicken.

Persimmon cookies are a seasonal kid favorite!

My family loves persimmons, but once they get a little overripe, they end up in the compost. My friend’s grandmother’s recipe for persimmon cookies is an excellent way to use up those old persimmons.

Persimmon Cookies

Preheat oven to 350 degrees.

  • 2 to 3 persimmons
  • 1 teaspoon baking soda

In the blender, pulp the persimmons. Combine with baking soda and let sit for five minutes.

Holiday Recipes: Homemade Corn Syrup Free Marshmallows

Did you know that traditional store bought marshmallows contain ingredients like blue dye, tetrasodium pyrophospate and artificial flavor? Ick. Not for my kids.

Our house is chemical free, which means nothing artificial in our food either! We also avoid corn syrup and cook with a lot of vegan ingredients.

These are the best ever marshmallows, perfect for topping hot cocoa (or adult beverage of choice) or whipping up in sweet potatoes and krisp rice treats.
